Tomato Cucumber Gazpacho

All of the Holiday meals weighing you down? This tomato-cucumber gazpacho is the PERFECT dish to make you feel light on your toes. It’s also an AMAZING recipe to utilize leading into the Keto Reboot!👌 Tomato Cucumber Gazpacho 🍅🥒 (Makes 12 Servings) 🔹️Ingedients:🔹️ 6 cups chopped tomatoes 2 cups chopped peeled cucumber 1 cup chopped red onion 1 package BETTER//BROTH™ Keto Thyme 2 tbsp fresh lemon juice 1 tbsp extra virgin olive oil 1 tsp sea salt 1/4 tsp black pepper 1/2 cup grape tomatoes, quartered 1/3 cup chopped fresh parsley

🔹️Instructions:🔹️ 1. Add the 6 cups chopped tomatoes, 1 1/2 cups of the chopped cucumber, 3/4 cup of the chopped red onion, 1 package BETTER//BROTH™ Keto Thyme, lemon juice, olive oil, salt and pepper to a food processor or high powered blender and process until liquified, about 1 minute. 2. Add in remaining in remaining cucumber, onion, and grape tomatoes 3. Chill for 1 hour before serving. 4. Garnish with parsley.
